I've done both new starting zones, and leveled my worgen rogue up to level 30, having made my way from Darnassus through Darkshore, Ashenvale, Stonetalon Mountains, and now entering the Southern Barrens.  Impressions so far:

The worgen starting zone is epic; the goblin one is hilarious and awesome.

The world is ALIVE.  Stuff happens around you and the world feels much more dynamic.  The alliance and horde are very definitely at war -- there are sieges and active combat going on in every zone I've seen so far.

Terrain is much less annoying -- most of the impassable cliffs (Azshara was one of the worst examples) now have ways to climb them.

Almost gone is the sour feeling I got rolling a new alt from having to run everywhere.  Transportation in one form or another is available almost anywhere you want it.  I used to hate Darkshore because it was such a long, narrow zone, but now its wonderful.

Mobs are generally as easy as you'd expect from low-level stuff.  But typically if a mob has a name it has extra hit points, making them much more interesting.

Leveling is streamlined.  You don't have to return to train every 2 levels since your skills scale.  Quests usually occur in little hubs so you aren't trekking all around trying to do everything at once.  There are enough breaks in the monotony with cool vehicles, unique quests, the occasional quest you actually need to read before doing, etc, that you need fewer mental breaks.

Not much.  I decided not to do any of the 80+ stuff until it goes live, just to keep as much of the shiny new feeling as possible.  But I've transferred over my warrior and my druid and putzed around a little with combat dummies.  It actually messed up my fury stuff for a little while on Marrowgar the other night.  It took me a bit to get back into the old groove.

I've seen what appear to be a few screen shots and/or videos from the beta and it looks like the terrain has a new level of detail to it.  That seem to be the case?

The water has certainly been upgraded (although now its too mirror-like, you can't even see through the shallows).  Beyond that, I can't say for sure.  It certainly looks better to me, but I've turned up my graphical settings from what I use on live (so raiding is as smooth as possible).  But its probably likely — I know there are some engine upgrades around.
